Production
|
The vintage took place in almost perfect Autumn conditions: apart
from some early rain, October and November remained fine and dry.
The wine was made from selected hand picked grapes at differing
levels of ripeness from just barely approaching ripeness to almost
overripe and beginning to shrivel, designed to add some freshness
and complexity to the finished wine. Cold static settling and
cool controlled fermentation using a range of different yeast
types were followed by a very light fining to encourage the wines
to settle. One ferment was left slightly sweet so that the natural
residual sugar would balance the fresh acidity.

|
appetising green, ferny notes lift a very clean, lemon/lime bouquet.

Taste
|
a pleasantly crisp, clean note of acidity runs through the excellent
length of this wine. It has a surprisingly rounded texture on
the palate, enhanced by a very aromatic, zesty, citrussy character.

lightly chilled with classic fish dishes.
